The Journey Begins

In 2000 I started living the "low carb lifestyle" and lost 50 pounds.  In December 2001 I had gastric bypass. Between the two I lost 165 pounds.  I got lazy and returned to my old eating habits and have regained some of my weight.

I'm beginning the journey to lose those pounds.  I have to remind myself I didn't gain them overnight and I will not lose them overnight.  It's not important how fast I finish...just that I do.  So, I'm going to share new recipes that I find or create as I take control of my life.
 
Last night I experimented with a recipe and it was a huge hit!  So here it is...bacon wrapped meatballs.

Ingredients:
2 pounds ground beef
1/2 chopped onion
1/2 chopped green pepper
1 tbsp minced garlic
1/4 tsp salt
1/8 tsp pepper
1/2 pound bacon
toothpicks

Directions:
Put the ground beef in a bowl and cover with a lid.  Let it sit on the counter for about 30 to bring it to room temperature.  This allows the meat to stay together when making the meatballs.  Mix the ingredients listed above and make large meatballs, about the size of a pool ball.  Wrap bacon around the meatball and stick the toothpick in sideways to hold the bacon in place.  Bake at 350 for one hour.  Remove from oven, turn broiler on, return meatballs to oven under the broiler for 3 minutes to crisp the bacon.
